Hello, I was wondering if it's possible to completely avoid using Paypal and instead only use a merchant account on new stealth accounts?

Yes absolutely. I use merchant account only (NO PayPal) on one of my biggest selling eBays. That eBay has been around so long I don't even consider it a stealth, but it was created by me using my Short List.

Basically you must offer PayPal in the UK, but may offer a merchant account in addition.
